Garlic Mashed Potatoes



Potatoes cooked in milk with a clove of garlic are simply heavenly!

You will be surprized at the creaminess that comes from the added fat-free cream cheese. 

You will need:
1.5 pounds russet potatoes
2 gloves garlic peeled
1 cup low-fat milk
2 tablespoons fat-free cream cheese

Wash, peel, and cut the potatoes into 1-inch cubes. Add to a heavy-bottomed saucepan. Add the garlic and milk and bring to a simmer over medium heat. Then lower the heat slightly, cover, and cook for about 15 minutes or until the potatoes are tender when a sharp knife is inserted into the centre of the potatoes. 

Remove the pan from the heat and add the cream cheese. Mash the potatoes and garlic, using a potato masher or fork, until the milk has been incorporated and the potatoes are fluffy.
