- 2 medium sized fresh ginger knobs
- 2 ripe peaches, pitted and quartered
- 1 ripe banana, peeled and quartered
- 1 cup unsweetened apple juice
- 6 ice cubes
- 2 mint sprigs
Grate the ginger finely and squeeze the juice out of the
pulp into a blender (discard the squeezed pulp). Add the peaches, banana, apple
juice and ice. Blend until smooth. Pour into glasses, place a mint sprig in
each and serve immediately.
