The dry texture of Panettone is just great for this
extraordinary omelette.

Ingredients
- 2 eggs
- 2 tablespoons oil
- 4 large slices Panettone, halved
- 2 tablespoons caster sugar
Preparation
1.Break the eggs into a bowl and whisk lightly. Tip into
swallow bowl. Heat the oil in a large non-stick frying pan.
2. Dip the Panettone slices in the egg and fry for 2-3 minutes
on each side until golden brown.
3. Drain and dust with sugar. Serve with fresh summer berries.
